Instant Pot Zuppa Toscana Tortellini

A rich and delicious Zuppa Toscana made with herb chicken tortellini in your instant pot. This is by far one of my very favorite soup recipes. This soup has herb chicken tortellini, spicy Italian sausage, Smokey ham, spinach, carrots, onions and potatoes along with some other ingredients that make this recipe oh so good.

Ingredients

  • 1 lb Spicy (hot) Italian Sausage you can use mild Italian sausage if you prefer.
  • 20 oz Buitoni Herb Chicken Tortellini Refrigerated
  • 4 oz Ham Off the Bone or ham steak, chopped medium
  • 1 quart Chicken Broth
  • 2 cups Cream
  • 1-2 Tbsp Olive Oil

Produce

  • 2 Carrots chopped medium
  • 1 Yellow Onion chopped medium
  • 6 Garlic Cloves sliced
  • 1 Shallot chopped optional
  • 3 Celery stalks sliced small
  • 1 medium Golden or Red Potato chopped small
  • 2 cups fresh Spinach chopped small
  • 2 Tbsp fresh Parsley chopped small or 1 Tbsp dried Parsley

Seasoning

  • 2 1/2 tsp Salt
  • 1/2 tsp Black Pepper
  • 1/2 tsp Thyme dried
  • 1/2 tsp Sage rubbed

Instructions

  • Chop ham, onion, shallot, carrots, celery, potato, and dice garlic
  • Press Sauté, when the pot is 'Hot' add olive oil and carefully drop in spicy Italian sausage
  • Break up the sausage with a flat wooden spatula
  • Brown on sauté for 5 minutes and drain any fat if desired
  • Add ham, onions, shallots, carrots, celery, potatoes and garlic to the pot and stir the ingredients into one another
  • Let the ingredients sit on sauté for another 5 minutes and then cancel sauté
  • Add salt, pepper, thyme, sage, and parsley
  • Stir ingredients well
  • Add chicken broth and 2 cups of cream, put the lid on, seal it, and pressure cook for 6 minutes
  • As soon as the six minutes are done, release the pressure
  • Remove the lid, add the herb chicken tortellini and put the lid back on and seal it
  • Pressure cook for zero minutes
  • As soon as it comes to pressure and beeps (~8 minutes) release the pressure
  • Remove the lid after the pin has dropped, add the 2 cups of fresh spinach, stir the ingredient, and let sit for 5 minutes
  • Serve it up and enjoy!
