1 Whole Chicken | |
4-6 slices of butter 1/8 inch thick | |
1 Onion chopped | |
1 Can Beer or Chicken Broth 1 Tbsp Olive Oil | |
RUB | |
1 Tbsp Garlic Powder | |
1 tsp Onion Powder or Dehydrated Onions | |
1 tsp Paprika | |
1 tsp Salt | |
1/2 tsp Black Pepper | |
1 Tbsp Brown Sugar | |
1 Tbsp Honey | |
2 Tbsp Olive Oil | |
2 Tbsp HOT water |
Mix rub ingredients |
Remove chicken parts and dry the bird with a paper towel |
Massage the rub all over the bird including under the skin of the breasts and through a small slit in the skin for the legs and thighs |
Chop 1 Onion |
Rub 1 Tbsp of olive oil into the cold instant pot |
Add 2/3 cup beer or chicken broth to the instant pot saving the rest of the beer/broth in the can, peel the paper off the can and remove the can lid |
Add ~2 Tbsp of the rub and a handful of chopped onion into the 1/3 full can of beer/broth |
Add the rest of the onion to the instant pot |
Carefully slide the chicken onto the beer/broth can with the rub and onion, it’s a tight fit |
Slide butter slices under skin of the breasts and thighs |
Place Chicken with the can into the Instant Pot with the bird standing up |
lightly oil the underside of the instant pot lid, the chicken will probably hit the lid |
Put on the instant pot lid, Seal the pressure release valve, and pressure cook your bird for 6 minutes per pound (a 3 pound bird is 18 minutes) |
Natural pressure release for 10 minutes and then release pressure valve |
Once the pin drops, remove the lid and carefully remove the bird with tongs and a spatula placing it on a plate |
It will be very delicate and may fall apart; but no worries, the chicken is AMAZING, the bones and cartilage have been cooked down, so a chicken that falls apart is a good thing |
Let the bird rest for about 5 – 8 minutes and then carve the bird |
Preheat your air fryer or broiler to 400 degrees for 5 minutes |
Oil the air fryer basket and place the chicken pieces in the air fryer basket skin side up |
Air fry or broil at 400 for 5 – 10 minutes or until the skin is golden brown, keep your eyes on the chicken so it does not burn |
Remove your chicken and serve with rice, potatoes, broccoli, green beans, and/or a salad |
