Easy Mexican Rice

Disclaimer: you will need a rice cooker for this recipe! Most Instant Pots do have this setting, but we use a separate rice cooker.

INGREDIANTS

  • 1 Cup Brown Rice
  • 2 1/4 Cup Chicken Broth
  • 1 Can Corn (drained)
  • 1/2 tsp Salt
  • 1/4 tsp Pepper
  • 1 tsp Garlic Powder
  • 1 tsp Onion Powder
  • 1 tsp Oregano
  • 1 Tbsp Olive Oil
  • 1 tsp Paprika

INSTRUCTIONS

  1. Oil rice cooker and turn on
  2. Add rice and cook until brown
  3. Once the rice is browned, add the rest of the ingredients and mix well.
  4. Put the lid on the rice cooker and allow it to cook rice
  5. Once done, wait another 30-45 minutes allowing rice to sit
