I have to tell you, cooking chili in the instant pot is fun and rewarding. I have tried many different chili recipes in my life and when we got ourselves an instant pot, I couldn’t wait!

One thing I had a problem with at the beginning was getting the dreaded burn notice. My worst enemy. I’ve learned a lot about layering, when to add liquids, and when to stir.

Pressure cooking your chili physically pushes the flavors of your ingredients into your food using the right amount of some sort of liquid. It also breaks down tough fibers into tender deliciousness.

Why Chipotle Peppers?

Chipotle peppers in adobo sauce have a very specific smoky flavor that can take an existing recipe to a whole ‘nother level. Have you ever tried chipotle chicken? It’s amazing. So, why not add some chipotle peppers to your favorite chili recipe.

What about Bratwurst?

Bratwurst is an easy going flavor that I have always loved. I have to admit, most of the time when I eat bratwurst, it’s cooked in beer and pinched between a sliced bun with onions and peppers. I did not want to add another powerful flavor to compete with the chipotle in our chili.

You can always use different sausages or use a smoky sausage instead of adding chipotle peppers. The possibilities are endless and why stay within the parameters of tradition.

How do you Make Chipotle Bratwurst Chili?

Equipment

  • Pressure Cooker (Instant Pot)
  • Sharp Knife
  • Cutting Board

Ingredients

Bottom Mixed Layer

  • 1 lb Ground Hamburger
  • 1 lb Bratwurst uncooked and casings removed
  • 1 Tbsp Olive Oil
  • 4 cloves Garlic sliced
  • 1 Brown Onion chopped small
  • 15 oz can Pinto Beans rinsed and drained
  • 15 oz can Black Beans rinsed and drained
  • 15 oz can Kidney Beans rinsed and drained
  • 1 Tbsp Worcestershire Sauce
  • 1 Tbsp Soy Sauce
  • 4 Tbsp Chili Powder
  • 2 Tbsp Oregano
  • 1 Tbsp Salt
  • 1 Tbsp Paprika
  • 1 Tbsp Cumin
  • 1 Tbsp Granulated Garlic or garlic powder
  • 1 Tbsp Granulated Onion or onion powder
  • 1 Tbsp Crushed Red Peppers
  • 1/2 tsp Cayenne Pepper

Top Not Mixed Layer

  • 15 oz can Corn with the Liquid
  • 28 oz can Crushed Tomatoes or tomato sauce
  • 14 oz can Diced Tomatoes
  • 3 Tbsp Tomato Paste
  • 4-8 Chipotle Peppers in adobo sauce (8 delivers a stronger chipotle flavor)

Instructions

Bottom Mixed Layer

  • Rub 1 Tbsp of olive oil onto the inside of the instant pot with a paper towel
  • Press Sauté on the instant pot and when the pot is HOT, drop in 1 pound of ground hamburger
  • Use a sharp knife to slice the casing on one side of each bratwurst and remove the casing
  • Drop the bratwurst into the instant pot with the hamburger
  • Break the hamburger and bratwurst into small chunks with a flat wooden spatula
  • Let the burger and bratwurst brown for 5 minutes, stir and chop into smaller pieces, and brown for another 5 minutes
  • Cancel sauté and drain the fat from the meat
  • *I use an Instant Pot slow cooker lid to hold the meat in while I drain out the fat into aluminum foil pressed into my kitchen sink, watch my video to see me do it
  • Drain the pinto, black, and kidney beans and add them to the meat in the instant pot
  • Chop 1 onion and slice 4 cloves of garlic
  • Add the chopped onion, garlic, Worcestershire sauce, soy sauce, black pepper, salt, chili powder, paprika, cumin, granulated garlic, oregano, crushed red peppers, and cayenne pepper to the instant pot
  • Stir the ingredients well

Top Not Mixed Layer

  • Pour in 1 can of corn with the liquid and diced tomatoes with the liquid into the instant pot
  • Use a spoon to spread corn and tomatoes evenly over the top
  • Evenly pour 28 oz can of crushed tomatoes or tomato sauce over the corn and diced tomatoes
  • Spoon 3 Tbsp tomato paste and add 4-8 chipotle peppers on top, do not stir
  • Put the instant pot lid on, seal the pressure release valve, and pressure cook for 20 minutes with a 15 minute natural pressure release
  • Release what pressure is left after 15 minutes of natural pressure release and remove the lid
  • Stir the ingredients well with a wooden spatula scraping the bottom clean
  • Ladle chipotle bratwurst chili into bowls and top with your favorite toppings, like shredded cheddar cheese, sliced green onions, diced white onions, and cheese its
  • Enjoy your magnificent chipotle bratwurst chili!
