Char Siu Chicken Thighs Slow Roasted in the Air Fryer?
Bone in skin on chicken thighs are marinated in a powerful char siu marinade and roasted in your air fryer at 200°F. The slow roasted air fryer char siu chicken thighs are then blasted with 400° air for 10 minutes. This method produces a very juicy and flavor rich chicken thigh meat with a lightly charred skin that tastes like candy.
Why use Bone in Skin on Chicken Thighs for our Char Siu Chicken Thighs
I really like to use bone in skin on chicken thighs for this recipe because the bone adds moisture and flavor to the meat. Imagine a femur bone packed with bone marrow slow cooked and leaching flavorful moisture and aroma into the surrounding dark meat of the chicken thigh.
Do not forget the first thing your lips will hit when taking that first bite, the sweet flavorful chicken thigh skin crisped at 400°F after the slow roast. That is why we use bone in skin on chicken thighs for this recipe.

Lemon Zester/Cheese Grater

- 4 Chicken Thighs bone in skin on
Marinade
- 4 cloves Garlic diced
- 3 Tbsp Hoisin Sauce
- 3 Tbsp Soy Sauce
- 2 Tbsp Honey
- 2 Tbsp Brown Sugar
- 1 Tbsp Sesame Oil
- 1/2 tsp Five Spice or All Spice
- 1/4 tsp Black Pepper
Marinade
Dice 4 large cloves of garlic
Mix all marinade ingredients together in a 1 gallon zip lock bag or medium bowl
Put chicken thighs into the marinade bag, zip it closed, and shake the bag well to completely cover the chicken thighs
Refrigerate for 6-24 hours flipping or massaging halfway through the marinating to make sure all of the chicken thighs get a chance to sit at the bottom
Air Frying
Remove chicken thighs from the refrigerator about a 1/2 hour prior to cooking
Preheat Air Fryer to 400°F for 5 minutes
Spray olive oil evenly over inside of the Air Fryer Basket (we use EVO spray bottle and I love it)
Place thighs into the air fryer basket skin side up and lightly spray with olive oil
Air Fry at 200 °F for 30 minutes, spray the chicken lightly with olive oil, flip the chicken thighs and spray the chicken thighs with olive oil
Air fry for another 30 minutes at 200°F
After 60 minutes at 200°F, air fry chicken thighs at 400°F for 7 – 10minutes (thighs are skin side down still and check the thighs at 7 minutes to see if the skin is crisp, if not give it another minute or so)
Use tongs or a cookie spatula to move chicken thighs to a plate skin side up to rest for 8 minutes
Serve Char Siu chicken thighs with your favorite sides like rice, steamed vegetables, wantons, dumpling, or by them selves
