As you can imagine, being parents of young kids equals many nights where we play “will they eat it”. I know the moment we opened the Instant Pot that the kid would both love these chops. As I’ve said in (probably) every post we live small. That means that smells live big (haha). I absolutely would make these again just to have our entire home smell delicious.
The perfect sides
I should add, if you are looking for sides to this main dish, salad and veggies paired perfectly. All things considered, I would 100% use a salad with “fruit” undertones. Our dressing had blueberry notes and the contrast between the southwest ham and the fruity sweet salad was amazing. A perfect pair. We tend to always have vegetables with dinner with just some salt and pepper on top. They really are a wonderful addition that completes the meal.

Remember, almost all recipes can be adjusted (ours and others). If you find this recipe to have a bit too much “heat” skip the cayenne pepper. You can also go the opposite direction (add heat) by using an extra 1/4 to 1/2 teaspoon more of cayenne pepper.
